Southern Biscuit Muffins

Crunch . . crunch . . crunch . . . Oh, pardon me. I was just enjoying my breakfast. I couldn't wait to tell you about it because with just a fraction of the effort it takes to make biscuits, I made these instead with the same benefits.



Golden,



Crunchy,



Fluffy and . . .



Moist and buttery inside.



Normally I don't even make my dough for biscuits from scratch. I use Bisquick. I planned on making biscuits with eggs and sausage for a breakfast sandwich, but found I had no Bisquick.

I went to my favorite cookbook {Great American Favorite Brand Name Cookbook} and found a recipe for Southern Biscuit Muffins. Looking over the list of ingredients and directions, I discovered I had everything I needed and decided to make them.

Excuse me, I have to take another bite. . .



Now that I am all done,



I should just give you the recipe so you can make some for yourself and family or friends.

Southern Style Biscuit Muffins
2 1/2 cups all-purpose flour
1/4 cup sugar
1 Tbsp baking powder
3/4 c cold unsalted butter
1 1/2 cup cold milk*

Preheat oven to 400 F. Grease standard size muffin pan. Place flour, sugar and baking powder in bowl; mix to combine. Add butter and use paddle attachment {or two knives} to cut butter into flour. Butter should be about pea size. While still mixing, add milk.

Spoon dough into muffin cup. Fill all 12 cups in pan. Bake for 15-18 minutes. Let cool in pan. Run knife around edge before removing muffins. Enjoy with butter and jam or sausage gravy.

If the dough seems to thin with this much milk, just add a couple of tablespoons of flour and stir.  Do again, until dough is about the consistency of muffin dough {thicker than cake batter}.

  1. You are cruel! Cruel I tell you! To have the pics of the biscuit disappearing right before my eyes was tortuous! :) Not really, but it really, really, really made me want to try them! (Good ploy!) I am usually a Bisquick girl myself but have been venturing outside of my comfort zone with non-Bisquick pancakes which I find as easy and much better tasting than the Bisquick ones. Could the same be true for biscuits!? I'm looking forward to trying your biscuits! BTW: You had me at the word "crunchy", you had me at the word "crunchy"...

  2. Your biscuits look delicious!! We love biscuits, but I always make them from scratch. The cookbook I use automatically opens to the page with the biscuit recipe. We also enjoy them for snacks. Your post makes me very hungry for biscuits. I might just have to make some this weekend. :o)

    Like you made my biscuits with Bisquick for years. Decided to try an old fashioned from scratch recipe and found to my surprise they did not really take any longer to make from scratch. Bisquick is still a staple in my pantry (love all the impossible pie especially the quiche) I am going to try your recipe as they sound and look really nice.

    1. I think the biscuit making will go quicker for me if I just start doing it more often! I have found these to be real tasty and my children love them. Hope you like them, too. Just remember to grease the pan well and don't use paper liners!
